I hail from the charming city of Dublin. My adventure started back in '91 when I waved goodbye to school. I roamed from country to country, embracing different cultures and flavors along the way.
London stole my heart for 20 years
I dove headfirst into the culinary universe and had the privilege of working alongside some of the finest chefs in the UK. I even had the honor of gracing the kitchens of 1 & 2 Michelin Star establishments.
Settling down in Stockholm
I landed a position as the head of the Pastry team at the newly opened Haymarket Hotel. I poured my heart and soul into the role for two and a half years until an amazing opportunity came knocking at The Grand Hotel Stockholm.
Then the pandemic hit, giving me time to reflect and figure out my next moveā¦
Et voila! Spongecookies was conceived
